Importance of graduate courses

I am an international student and applying this year for pure maths PhD.
I have a few questions about the importance of taking graduate classes as undergrad. How important are they in getting admission to say, schools in the top 20-30?
I am just wondering, since I am taking grad classes during my senior year, the grades are certainly not available in the transcript yet when I am applying. How will the school know that I am taking grad courses? Will I be at a disadvantage compared to those who are taking it earlier, and have it on their transcript?

You can always mention in your SOP that you've done all of the undergrad classes and that this year you plan to take the following courses...
